Kollman family owns new Chicken Express

The new Chicken Express at 6720 82nd St. may be one of more than 100 franchises, but the restaurant is family-owned and has family touches all around.

Robert Kollman, who owns the business with his wife and partner, Stacey, said the business is the fourth Chicken Express franchise that the couple has opened, with three now in the Lubbock area. The first franchise they opened almost 12 years ago is still open in Plainview.

The couple opened their first Lubbock franchise more than eight years ago at 82nd Street and University Avenue, followed by one near Texas Tech seven years ago at Fourth Street and Toledo Avenue.

They decided to open another franchise in Southwest Lubbock because of the growth in the area.

“There’s so much growth out here, it’s amazing,” said Kollman. “We’re set up to do a lot more volume.”

The store is probably the most western store in the entire Chicken Express franchise, Kollman said. Chicken Express started as a Texas business in Benbrook and recently celebrated 20 years as a franchise.

Kollman said the couple’s four restaurants now hire about 130 employees.

The restaurant serves fried chicken and catfish and lots of down-home side dishes, as well as sweet tea by the gallon. In addition to combo meals for individuals, the restaurant also serves family meal packages with sides included.

In each of the restaurants, Kollman said Stacy has done the decorating, which includes the use of crosses and Texas state flags.

“All of our stores have that. That’s what we want, our values to be displayed. Not everyone has the same values. That’s okay,” he said. “Each one of our stores has a Texas flag that was flown over the Capitol the day we opened.”

The new store in the Frenship area also has literal family touches – the Kollmans’ three small sons left their handprints in the cement outside the store. Although Kollman said he commuted from Plainview to Lubbock for several years, the family moved to Lubbock when they started the newest franchise business, he said.

The restaurant is open seven days a week from 10:30 a.m. to 10 p.m.

    we ordered food from this chicken express yesterday and when i got the order home the put the gravy and some of them had the slaw put in side ways.. i had 8 combo orders and the bad was a mess and it was all over the chicken… when i called they said the only option was to bring it back and let them redo it.. like im going to make my kids wait another hour to eat because they messed up…. they werent helpful with the issue at hand and very rude about the problem.. do anyone know how to contact the owner! if so please email me the contact info at hdunn_82@yahoo.com
